had a major sugar craving this afternoon, but it was just too hot to bake, so i got an idea from this sweet girl and went with some no-bake-cookies. there are a lot of adaptations of this recipe, but i kept it simple on the ingredients and they were delicious. i changed mine up a little bit and used some of the ingredients i had on hand...

no-bake cookies
ingredients
1 1/4 cups white sugar
1/2 cup rice milk
1/4 cup butter
4 tablespoons unsweetened cocoa powder
1/2 cup crunchy almond butter
3 cups oats
1 teaspoon vanilla
directions
in a medium saucepan, combine sugar, milk, butter and cocoa. bring to a boil and cook for 1 1/2 minutes. remove from heat and stir in almond butter, oats and vanilla. drop by teaspoonfuls onto wax paper. let cool until hardened.

I seriously made almost the exact same things last night for the same reason. Needed to bake, too hot...needed chocolate.
The recipe ended up being like this:
1 cup almond butter
1/2 cup raw honey
1/4 cup ground flaxseed
1/4 cup raw cocoa powder
1/4 cup coconut oil
1 Tbsp. vanilla
1/4 tsp. sea salt
6 cups puffed brown rice
Refrigerate and roll into balls.
The puffed rice got a little soggy, so I think I will try oats next time...that was a good idea.
They were delicious and sort of healthy.
your cookies look delicious.. sorry i did not get the recipe to you faster.. i had finals and got caught up with them... i am going to have to use your recipe and try them. i was wondering how to make them as healthy as possible.. i know it chocolate and all, but we can try right?
